Have you embraced cauliflower yet? It has a ton of vitamin c, fiber, and phytonutrients. However, my husband was not such a fan and, as a result, I just didn’t make it very often. I decided to try some new recipes determined to get my family to eat it. And it worked…Kid and Husband approved!
Here are a few of our favorites! Healthy,
delicious, and easy!
CAULIFLOWER RICE:
Ingredients:
1 Tablespoon Organic Extra Virgin Coconut Oil or Grape seed Oil
1 large or 2 small heads of cauliflower, or one package of riced cauliflower
1 Bunch of scallions
3 garlic cloves, minced
sea salt and fresh ground black pepper (to taste)
How to:
CAULIFLOWER POPCORN
Your kids will love this healthy snack!
1 head of cauliflower, cleaned and chopped into small bite-sized pieces
Extra virgin olive oil
Seasoning of your choice (sea salt, parmesan cheese or nutritional yeast, cinnamon, black pepper-whatever you like!)
How to:
Preheat oven to 450 degrees
Drizzle the chopped up cauliflower with olive oil
Sprinkle your seasoning of choice (our favorite is nutritional yeast and pink sea salt!)
Bake for approximately 20 minutes, or until the tops begin to brown.
ROASTED CAULIFLOWER
An easy side dish that’s quick enough for weeknight dinners!
Ingredients:
1 large head of cauliflower, cut into florets
1/4 cup Extra Virgin olive oil
3 garlic cloves, chopped
1/4 teaspoon red chili flakes
1 teaspoon Sea salt
1/2 teaspoon freshly ground black pepper
1 Tablespoon Grated Parmesan cheese (or Nutritional Yeast if you are dairy free)
Juice of 1/2 lemon
How to:
Preheat the oven to 450 degrees F.
In a large bowl. toss cauliflower with the olive oil, garlic, chili flakes, salt, and pepper
Spread in a single layer onto a baking sheet
Roast for approximately 20 minutes, until golden brown. Sprinkle parmesan cheese or nutritional yeast over cauliflower in the last 5 minutes of cooking
Transfer to serving bowl, add lemon juice and toss.
