Taco Tuesday! Isabella came out of school today literally jumping up and down because she knew that we were having tofu tacos for dinner. I’m not kidding! One of the awesome things about tacos or fajitas is that kids get to “play” with their food and build it the way they want it! If they make it, they will eat it!
Easy to make, high in protein, vegetarian, and delicious! Just a note-Tofu is one of those things that is really important to buy Organic to ensure non GMO
1 package Organic extra-firm tofu, drained
1 1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon sea salt
1 tablespoon sunflower oil (you can use olive oil if that’s what you have)
3 cloves garlic, chopped
3 green onions, sliced thin
1 can black beans, drained and rinsed
12 tortillas
Suggested Toppings: Chopped tomatoes, Chopped lettuce, salsa, hot sauce, greek yogurt (in place of sour cream), shredded cheese
How to:
Drain the tofu, cut in half, and place between layers of paper towels. Place a pan on top of it weighted down with cans or something heavy.Put tofu, chili powder, oregano, cumin, and salt into a bowl and mash together with a fork. Set aside.
Heat oil in a large skillet over medium heat. Add garlic and two-thirds of the green onions and cook until soft, about 3 minutes. Add tofu mixture and cook, stirring occasionally, until most of the moisture has evaporated, about 12 minutes. Add beans, stir and cook for another 3 minutes
Spoon into tortillas and add your toppings of choice.
