My daughter loves Spanish style rice, but the boxes all have so much sodium and too many ingredients. This was so easy to make, healthy, and was so delicious!
1 tablespoon extra virgin olive oil
2 cloves garlic, chopped
1 yellow onion, chopped
1 cup brown rice
2 cups low sodium organic vegetable broth
1 tablespoon cumin
1/2 teaspoon black pepper
1/2 cup chopped cilantro
1 can organic diced tomatoes
Sea Salt to taste
In a medium sauce pan saute onion and garlic in olive oil on medium heat until tender. Add all remaining ingredients and bring to a boil. Cover, reduce heat and simmer on low for 40 minutes. Let sit for a few minutes to absorb any liquid.
