Ah, the words every Mom wants to hear at the end of a long day…. “Mom, are you busy tonight”? This was the question my 6 year old asked at 6:00 PM as we were walking home. I actually was busy . After a crazy week, my plan was to sit down with a glass of red wine, and watch Grey’s Anatomy and Scandal. “Why?”, I asked her. “Because my teacher said that we could bring in a baked treat for Halloween tomorrow. Can you please make something?”. Of course I can…. My stand by Black Bean Brownie Cupcakes to the rescue.
I’m a cook, really not a baker. But, I have a couple of “go to” simple, healthy recipes for situations like these. I usually have all ingredients in my pantry, which at least saves a trip to the store. One of those is Black Bean Brownies. Yes, really! They are sugar free, nut free, and gluten free. And the kids LOVE them! Black beans are high in protein, fiber, magnesium, vitamin B, and antioxidants. They are so quick and easy to make and they are a treat you can feel good about giving your kids.
Black Bean Brownies:
Black Bean Brownie cupcakes

Ingredients
- 1 can organic black beans, drained and rinsed
- 1/2 cup unsweetened cocoa powder
- 1/2 cup Xylitol
- 2 teaspoons Stevia powder
- 1 teaspoon pure vanilla extract
- 3 large free range eggs
- 1/2 cup protein powder
- 1/4 teaspoon sea salt
- 1/4 cup water
Instructions
- Preheat oven to 350 degrees
- Add all ingredients to blender and blend until smooth.
- Pour the batter into mini muffin pan lined with foil cupcake wrappers.
- Bake for 20 minutes
Bake for 20-25 minutes until a toothpick inserted into the middle comes out clean
**You can also bake these as traditional brownies. Grease a brownie pan with coconut oil, pour batter into pan and bake for 35 minutes.
