By now you know I am obsessed with my slow cooker! There is seriously nothing better than having dinner cook itself. And since it looks like we are going to remain under a deep freeze for a while, chili’s, soups, and stews are what we are making a lot of over here! Here’s a delicious, healthy Turkey Chili with minimal prep. Enjoy!

Slow cooker Turkey Chili
1 1/2 tablespoons extra virgin olive oil
•2 medium onions, chopped
•1 1/2 teaspoon of dried oregano
•1 1/2 teaspoon of cumin
•2 pounds of organic ground turkey (choose lean)
•1/4 cup of chili powder
•2 bay leaves
•1 1/2 of teaspoon salt
•1 Tablespoon of unsweetened cocoa powder
•1/4 teaspoon of cinnamon
1 14.5 ounce cad Diced tomatoes
•3 cups of organic low sodium chicken broth or stock
•3 15 ounce cans organic beans (we used a mixture of pinto, black, and white), rinsed and drained
1 sweet potato, diced
1/2 cup Quinoa
1 tablespoon Organic Tomato paste
Heat olive oil over medium heat in a pan. Add the onions and saute until they are golden brown. Add the oregano and cumin spices. Stir. Add in the turkey and cook until no longer pink and transfer to the crock pot. Add all remaining spices, tomatoes, beans, sweet potato, and quinoa and chicken stock. Mix in the tomato paste. Set the crock pot to low and cook for 8 hours, or High for 4 hours
Serve with these optional toppings:
Avocado
Chopped cilantro
Greek yogurt (as a healthier, protein packed alternative to sour cream)
Shredded cheese
chopped red onions
Hot Sauce
