Cauliflower Ceviche

Ingredients
  • 2 cups riced Cauliflower
  • 2 large tomatoes, diced
  • 2 garlic cloves, minced
  • Juice of 2 Lemons
  • ½ Teaspoon Ground Cumin
  • 1 Jalapeno, seeds removed and diced
  • ¼ Cup chopped cilantro
Instructions
  1. Combine all ingredients in a large bowl
  2. Toss to combine
  3. Refrigerate for at least one hour for flavors to combine
