It’s almost…almost….time for outdoor eating! By far my favorite time of the year is when we can head up to our roof (that’s the equivalent of a backyard for those of us in the city), grill, and eat outside with friends. It’s like an impromptu party all the time. But, I like to keep it simple. Isn’t that one of the best things about spring and summer cooking? Plenty of fresh ingredients that you can pull together quickly that can be both healthy and delicious. This Watermelon Feta Salad is one of my favorites and always a crowd pleaser.
Tip: This Watermelon Feta Salad will keep for up to 3 days in the refrigerator. Make ahead and enjoy!
Cheese can get a bad rap. Feta cheese is lower in calories and fat compared to other cheeses. It is also high in Vitamin B, phosphorus and calcium. Feta cheese also contains beneficial bacteria and fatty acids. It can be high in sodium however since it is brined. We became obsessed with Feta Cheese on our Honeymoon in Greece and it remains one of our favorites!

Watermelon Feta Salad



3 cups watermelon chunks 4 ounces feta cheese 1/4 cup chopped mint leaves Fresh ground black pepper
Ingredients
- 3 cups watermelon chunks
- 4 ounces feta cheese
- 1/4 cup chopped mint leaves
- Fresh ground black pepper
Instructions
- Combine the watermelon chunks , feta cheese , and mint in a large bowl.
- Toss gently to combine.
- Add In black pepper (I used 3 twists of the pepper grinder)
- Tip: This salad will keep for a few days in the fridge. I made it for a Friday night barbecue and we ate it again on Sunday night.
